Chef’s Update Preserving the local season, we filled our pantry with house made jams, jellies and pickles from the organic harvest this fall to see us through the long winter months.

Enjoy preserved Okanagan cherries and jam made from Broxburn’s delicious Alberta strawberries. We created a sweet jelly from indigenous Bullberries harvested by Janet van Hierden of Driview Farm and are serving them to compliment the salt cured bison and smoked trout featured on our Smoked Fish and Game Platter. Enjoy our house-cured Duck Proscuitto, from the ducks reared by Ron and Sheila Hamilton at Sunworks Organic Farm. Their delicious organic chicken is also a fixture on our menu. You can find the Hamiltons at The Calgary Farmer’s Market every weekend throughout the year.

Celebrate the Season with Bubbly Over the past year, there has been a trend toward dry rosé wines and sparkling wines. There is no better time to enjoy a glass of bubbly than the holiday season, and Blue Mountain Vineyards encompasses both in their non-vintage Brut Rosé.

Ian and Jane Mavety are the owners of Blue Mountain and have been pioneers for quality wine in the Okanagan Valley since 1991. Using 100% estate grown fruit, this wine is made in the méthode traditionnelle meaning the traditional techniques for making French Champagne are employed faithfully. Finished dry, this wine is aged sur-lie for two-and-a-half to five years prior to being disgorged. They then receive an additional 6 to 9 months of aging preceding release. Made in extremely small quantities this wine is a real treat for any wine lover. Produced from predominantly Pinot Noir and Chardonnay grapes, this wine shows lovely strawberry fruit with lively bubbles and a slight toasty characteristic that finishes dry.

Enjoy this wine with a number of foods or simply sip it by the fireplace, no special occasion necessary.
